It ended up being a bad board for me. The new one arrived and everything works great.
The tech I was working with was extremely helpful, we went through everything it might possibly be and a bunch of things it shouldn't be but in the end the board was toast.
He said it was the first time he'd seen ...

Honestly I don't want to use repetier. I'll just make sure I remember to use extruder #1. :)

I'm printing an adapter in ABS to use an e3d hot end with one of my other printers now, so far so good. No warping or curling yet.

Cooling seems to be doing well for the heat break, but this won't work ...

Does it make sense that if I'm only using one extruder it has to be extruder 1?
I tried printing something specifying extruder 2 in the gcode through simplify3D but the printer heated up extruder 1 and was using that. It left extruder 2 hot but was only printing on #1.

I have not yet tried using ...

Good news!
I only had enough time tonight to test one of the extruders, but bringing it up to temp got it printing PLA.
I'll test the 2nd extruder tomorrow but it looks like it's going to work.

I couldn't have made this work without your help, I appreciate all the time and effort you put in to ...

I tested a few things this morning -

First was to plug an extruder stepper motor into the X axis wire. It worked. Did the same thing with the 2nd extruder motor, that worked as well.
I then moved the X axis wire to the first extruder plug on the board and tested both motors. Neither moved.

I turned the voltage on both extruder drivers up to 1.1v, they still don't spin

Ok, so from the trim pot to gnd is .85v for all 5 drivers.

Ok, so I've been talking to the seller, they sent me a new GT2560.
Good news, that fixed the problem with the Z axis
Bad news, now neither extruder moves.

The seller sent me back to you to figure out why that's happening
