You can just print a spacer so that it touches the endstop first.

Unfortunately the gt2560 revB have far less pins available than RevA, making it difficult to implement.

It is possible that the first layer is indeed too squished causing it to fuse to the tape. I would suggest getting a PEI sheet for easy maintenance and not having to worry about the aforementioned issue.
