Good news!
I only had enough time tonight to test one of the extruders, but bringing it up to temp got it printing PLA.
I'll test the 2nd extruder tomorrow but it looks like it's going to work.
I couldn't have made this work without your help, I appreciate all the time and effort you put in to help me. Thank you very much!
What should I do with the original board?

You mean the problem one?Maybe you can keep it since the seller didn't want it back.

Does it make sense that if I'm only using one extruder it has to be extruder 1?
I tried printing something specifying extruder 2 in the gcode through simplify3D but the printer heated up extruder 1 and was using that. It left extruder 2 hot but was only printing on #1.
I have not yet tried using both #1 and #2 at the same time, that'll be this weekend.

As far as i know,you can also use extruder 2 alone by specifying it before slicing.You can try Reptier Host again about that:

Honestly I don't want to use repetier. I'll just make sure I remember to use extruder #1.
I'm printing an adapter in ABS to use an e3d hot end with one of my other printers now, so far so good. No warping or curling yet.
Cooling seems to be doing well for the heat break, but this won't work for PLA. Do you have any suggestions for an off the shelf fan shroud to use a 40mm fan and cooling at the nozzle for PLA? I can print one eventually but I'd rather just order one right now.
